From N17 the driver goes up the A10 to the M25 at junction 25 and clockwise round the east side to the M23. It is longer in miles than cutting through the City, but usually steadier, especially with luggage and children in the car.
By train you would need the Victoria line to Victoria and then the Gatwick Express, or the Overground to Thameslink, which is fine for one person but hard work for a family.
By public transport: Train from Tottenham Hale or Bruce Grove into central London, then Gatwick Express or Thameslink, about 90–120 min. The catch is two or three changes and a cross-London transfer with cases. A car does the whole trip door to door in about 75 min, or 110 min when the roads are full, with your bags in the boot.
Out of Tottenham (N17) the route runs clockwise on the M25 from junction 25 via the A10, down to the M23 and Gatwick. Coming back from Gatwick the driver follows M23 north to the M25, anticlockwise to junction 25 and down the A10 to Tottenham. That is about 38 miles: reckon 75 min off-peak and 110 min when the M25 around the Dartford and Clacket Lane stretches is busy.

Your driver meets you at the North or South Terminal, whichever your flight uses. The M25 anticlockwise in the evening can be slow near Dartford, so allow extra time before Shabbat.
The Dartford Crossing and the M25 near Clacket Lane are the usual pinch points. Allow the full 110 minutes for morning flights and three hours at the airport for Israel-bound departures.
